O’Hendrickson’s Homemade Corned Beef
Brine
- 2 c coarse kosher salt
- 1/2 c sugar
- 5 cloves garlic, smashed
- 1 brisket (says 4-5 lbs, but …)
- 1 gallon H2O
- 1 cinnamon stick
- 8 whole cloves
- 8 allspice berries
- 1 t mustard seed
- 12 juniper berries
- 1/2 t ground ginger
- 1 t black peppercorns
- 2 bay leaves, crumpled
Cooking Liquid
- 1 bottle ginger beer
- 1 bottle good beer
Instructions
- Brine for 5-7 days; put a plate on brisket to weight down and flip every day
- Soak in regular H2O for a while before cooking
- Pour beers in a pot to cover brisket
- Boil then simmer for ~3 hours
- Add potatoes, carrots, and onions
